Azalina Eusope Stirs, and Stirs, Her First Batch of Kaya. Kaya, which means "rich" in Malay, is the dulce de leche of the coconut, a caramelized coconut-milk jam that Malaysian spread on toast, fill buns and rice cakes with, and drizzle over crepes. "Kaya is used for anything that in the United States that you put lemon curd or jam on," says Azalina Eusope, owner of Azalina's (and the Azalina's Lacy Crepes stand, which used to appear at the Alemany farmers' market). Azalina Eusope was one of the first chefs we met on our media tour. She is the owner of Azalina's Malaysian, and told us that she worked as a trained pastry chef in Malaysia. Eusope said that when she moved to the States, she discovered a niche that she could fill ... by making Malaysian street food. Azalina told us that because it is very hot in Malaysia, this is a cool and refreshing food that is served on the streets.
